german sausages w/quick kraut et curry ketchup




3 slices thick-cut bacon, 4 1/2ozs, cut n2 bite-size piece
1/2 head green cabbage, cored et thinly sliced, 6cups
4 medium carrots, peeled et coarsely grated, 1 1/2 cups
1 large onion, halved et thinly sliced, 1 1/2 cups
3/4 tsp caraway seeds
coarse salt et freshly ground pepper
1/3 cup apple-cider vinegar
8 cooked dausages, such as bratwursts, knockwursts, et frankfurters
1/2 cup ketchup
1 tbsp red curry paste
mustard, such as whole-grain, for serving
1.   cook bacon in a large straight-sided skillet over medium, stirring occasionally, until golden brown et fat is rendered, 5mins. add cabbage, carrots, onion, et caraway seeds; season w/salt et pepper. cover et cook, stirring occasionally, until vegetables are wilted et crisp-tender, 15mins

2.    stir in vinegar. pierce each sausage a few times w/a fork et nestle n2 cabbage mixture. cover et cook until sausages are warmed through, 5mins. stir together ketchup et curry paste in a small bowl. serve sauages et kraut w/curry ketchup et mustard.

gemelli w/shrimp et sugar snap peas



12 ounces gemelli or other short pasta
3    tbsps thinly sliced garlic, from 4 large cloves
2    cups chicken broth
2     tbsp extra-virgin olive oil, more for drizzling
       coarse salt et ground pepper
3/4    lb medium shrimp, peeled et deveined
2       tsps finely grated lemon zest, plus 1 tbsp fresh lemon juice
8       ounces sugar snap peas, trimmed et cut on the diagonal into 3/4-inch slices
3/4      cup crumbled feta, 3ozs
2        tbsp finely chopped fresh dill, plus more coarsely chopped, for serving
1.    bring pasta, garlic, broth, 2 cups water, et oil to a boil in a large straight-sided skillet; season w/salt/pepper. cook, stirring frequently.
2.     add shrimp et 1 teaspoon tsp lemon zest et cook, stirring occasionally, 1 1/2mins. stir in peas, 1/2 cup feta, et dill et cook, stirring, until peas are bright green et crisp-tender et shrimp are opaque, about 1min. stir in lemon juice. serve, topped w/remaining 1/4 cup cheese, remaing 1tsp zest, et coarsely chopped dill, et drizzles w/oil.

a whole fruit is not a serving.
example: half a meduim apple or half a grapefruit

is one serving as are 2 fresh apricots

oatmeal cookies

3       cups grain millers quick oats
1       cup butter or margarine
1       cup white sugar
1        cup brown sugar
1        egg
1        tsp vanilla
2         cups all purpose flour
1/2      tsp salt
2        tsps baking soda
1/2      cup chopped nuts, optional

preheat oven to 350. cream butter, or margarine w/sugars. blend in egg et vanilla. blend dry ingredients et add to creamed mixture, mix until well blended. drop by tsps on to greased cookie sheet, 2” apart. bake 20mins.makes 3 dozen cookies

10 minute chocolate oatmeal cookies

2 cups sugar
3 tbs. cocoa
1/2 stick margarine or butter
1/2 cup milk
1/2 cup peanut butter
3 cups grain milliers quick cooking oats
1 tsp vanilla

mix together et cook on stove for 2mins, then stir in peanut butter et vanilla. drop spoonfuls on waxed paper or greased cookie sheet……eat in 10-15mins.
